Keto Chocolate Pudding

Hey Guys!


So the other day I wanted some chocolate pudding. So I made some chocolate pudding. And let me tell you something, this pudding is amazing. I love it with whip cream and fresh strawberries, but I also made some more pie crust and made a keto chocolate pudding pie (scroll down or click here)!! Little more on that after the recipe.
Anyway, I am very excited to share this recipe with you so let’s get started!


Unfortunately I forgot to take my usual ‘you will need’ photo...so you will need to read the list this time…
You Will Need:
1 can (400 ml) (Mili) Coconut Milk
4 tbls. powdered erythritol or xylitol or stevia
4 tbls. Unsweetened cocoa powder
¼ tsp. pure vanilla
1 tbls. melted coconut oil


Mix all the ingredients together. I only used 2 tablespoons of Swerve but you really have to measure Swerve ‘to taste’. You have to beat this quite thoroughly otherwise it will be gritty.


It should look something like this.
Now if you have some keto or THM approved chocolate bits, now would be the time. I prefer my chocolate pudding plain, but if you enjoy some added flavor go for it!


Now divide it into your bowls. You should be just able to get 4 small portions, but it is okay if they are small because these are very rich.
Now refrigerate for an hour. It seems like a long time to wait but it is worth it!


And you are done! Now dump some whip cream on there and enjoy!


Now I did say earlier that I would mention how to make this into a pie so here we go! It’s actually pretty easy:
  1. Make this pie crust dough. Then grease a pie pan thoroughly with butter and cook the crust in the 350°F oven for 15-20 minutes or until slightly golden brown on the edges. Don’t forget to dock it!
  2. While that is baking make the pudding.
  3. Cool the crust completely.
  4. Pour the chocolate pudding into the pie. Be careful not to pour too much! I am speaking from experience…
  5. Now put the pie in the fridge and refrigerate until set.
  6. And you are done!
