Hey guys! Long time no see!
Today I have another recipe: Chocolate Marzipan Balls! These are sooooo delicious and probably my favorite healthy treat so far.
Let’s make some yummies!

You will need:
1 ½ cups Almond meal or course Almond flour
¼ cup Swerve Sweetener (I have used both the powdered and normal kinds and I loved both)
2 tsp Meringue powder or Egg white powder
2 tsp Almond extract
2 tbsp water
About 6 oz Chocolate
Mix the almond flour, swerve sweetener and meringue powder in your Cuisinart until well combined.
Add the almond extract and water and mix until the marzipan is doughy enough to hold it’s shape.

Roll the marzipan into small balls and set on a cookie sheet. If you want, you could get a mold and shape the marzipan into hearts and stuff (see above link for details) but I’m just doing little balls.
Now go ahead and freeze the balls until they are hard.
When the balls are hard get out your chocolate and melt it.
Now use two forks to roll the balls around in the chocolate.
I would like to take a moment to compare the beautiful smooth-ness of ~most~ of these balls to the coconut balls:
I am very happy with how my rolling skills have improved.
Once you have finished rolling the marzipan balls in chocolate put them back in the freezer to harden the chocolate.
