Hey ho!
I have a question: have any of you heard of coconut butter? Well, if you haven’t, here is the scoop on the magical stuff: Coconut Butter.
Anyway, my Mom recently asked what to do with our jar of coconuttiness. This is my solution!

You will need:
½ lb of coconut butter
¼ cup raw honey (start with 2 tablespoons and add if needed)
1 teaspoon vanilla extract
4 oz dark chocolate
¼ cup unsweetened shredded coconut
NOTE: Coconut butter is not coconut oil. Do not substitute.
2nd NOTE: I will be calling the coconut butter C.B. from here on out.
Start with softening the C.B. in the microwave until it is soft enough to handle. Go 30 seconds at a time, stirring between each interval. I would recommend only going once because my C.B. was too soft to roll into balls, but if you like my end result go ahead and microwave twice.
If you haven’t already, measure out ½ pound of C.B.
Mix the honey and the vanilla into the C.B. until it looks something like this.
As I said earlier, the C.B. was too soft to roll into balls so i just sort of plopped it onto the sheet and made it into a cookie shape. This works well so I’m not really fazed about it.
Now sprinkle the shredded coconut on the C.B. cookies. If you are doing balls just sprinkle the top.
Now freeze everything until it is hard. Mine took about 45 minutes.
When your cookies (or balls) have frozen melt the chocolate and plop it on the cookies (dip the balls). Freeze for about 15 minutes and you should be done!
Oo, big picture.
And you are done! These are really delicious and since they are about 75% coconut butter they can be considered “fat bombs”. Anyway I hope you give these a try and be sure to tell me if you do. See you next week!
