Raspberry Tart!

Hello!

Today I have something really yummy for you guys. A Raspberry Mousse Tart! Sooo good.
Let’s get into it!
You will need:
Crust:
1 1/2 cups almond flour
1/4 cup cocoa powder
3 Tbs Swerve
1/4 cup butter, melted

Raspberry Mousse:
2 cups raspberries + some for decorating, fresh or frozen (frozen should be thawed ahead of time)
2 Tbs Swerve
1 1/4 cup whipping cream
2 drops Stevia extract
1/2 cup sour cream
Notes: The amount of Swerve and Stevia used really depends on you. If you don’t mind your crust being a little bitter, go with the 3Tbs of Swerve. If you want it to be sweet, do more. Always! taste before baking. Same goes for the mousse.

Preheat the oven to 350°F.
Mix the almond flour, cocoa powder and the swerve together in a medium bowl.

Add the melted butter and stir thoroughly until it sticks together.

Transfer the crust into a pie pan and use your hands to press it in evenly.
Bake for 10 minutes then put it in the fridge to cool thoroughly.

In a food processor mix the raspberries and the powdered Swerve until it looks like this. Set aside.

In an electric mixer whip the whipping cream and Stevia until stiff peaks form.

Gently but thoroughly fold in the sour cream and raspberry sauce.

Remove the crust from the freezer and add the raspberry mousse. Freeze for two hours.
About 1 hour before needed, move the tart to the fridge.

When it is ready, add some raspberries to the top for decoration and you are done!

Tassels!

Hello!


Today we have another decoration for you to make!  Yay!
We are going to make tissue paper tassels!


You Will Need:
Tissue paper
Tape
Scissors
String


You can make your tassels as big as you want, but I will just tell you how to make some about as big as your hand.
Cut a strip of tissue paper roughly 3in tall and 9in wide. Cut another strip about 1in tall and 2in wide.


Now fold the larger strip into thirds.


Fold the large strip in half (but do not crease it!) and get your little strip ready.

Now wrap the little piece around the big piece and secure with a tiny bit of tape. You can fold it up a little to help wrap the small piece around.
You are almost done!


Now take your scissor and (carefully) cut the loose ends into strips. Shake it once or twice to loosen it up a bit and you are done!


Now grab a younger sister or two and you can mass produce these things pretty easily.

Coconut Cookies

Hey ho!

I have a question: have any of you heard of coconut butter? Well, if you haven’t, here is the scoop on the magical stuff: Coconut Butter.
Anyway, my Mom recently asked what to do with our jar of coconuttiness. This is my solution!

You will need:
½ lb of coconut butter
¼ cup raw honey (start with 2 tablespoons and add if needed)
1 teaspoon vanilla extract
4 oz dark chocolate
¼ cup unsweetened shredded coconut

NOTE: Coconut butter is not coconut oil. Do not substitute.
2nd NOTE: I will be calling the coconut butter C.B. from here on out.
Start with softening the C.B. in the microwave until it is soft enough to handle. Go 30 seconds at a time, stirring between each interval. I would recommend only going once because my C.B. was too soft to roll into balls, but if you like my end result go ahead and microwave twice.

If you haven’t already, measure out ½ pound of C.B.

Mix the honey and the vanilla into the C.B. until it looks something like this.

As I said earlier, the C.B. was too soft to roll into balls so i just sort of plopped it onto the sheet and made it into a cookie shape. This works well so I’m not really fazed about it.

Now sprinkle the shredded coconut on the C.B. cookies. If you are doing balls just sprinkle the top.
Now freeze everything until it is hard. Mine took about 45 minutes.

When your cookies (or balls) have frozen melt the chocolate and plop it on the cookies (dip the balls). Freeze for about 15 minutes and you should be done!


Oo, big picture.
And you are done! These are really delicious and since they are about 75% coconut butter they can be considered “fat bombs”. Anyway I hope you give these a try and be sure to tell me if you do. See you next week!

Games to do in the car!

Hey Guys!

So today I decided to do a post on games to do in the car. It’s pretty short right now, but as I get new ones I will do a second post later on.
These are games you could do pretty much anywhere, not just in the car. Tell me what you think in the comments!

The 7 Second Game:
Requires buddies
This is one is simple. Grab a stopwatch and tell your friend something like “name 5 states!” He/She will have 7 seconds to name 5 states. If he/she can’t do it within the 7 seconds, you give her a new thing (“name 6 animals” maybe) and they will go again. When they get it right or failed 4 times, hand him/her the stopwatch and tell her to give you a thing.
If you have more than 2 people playing, determine a rotation and hand the stopwatch to the next person in the rotation. The person that said everything in the 7 seconds the most wins!

Don’t get me started:
Requires buddies
Get your stopwatch out again and have your friend give you a topic. You have to go on an angry rant about that topic for a minute without stopping, saying uh or um or going off topic. The topic can be anything from Hermione Granger to fish. If you mess up, you have to go again with a different topic. The person with the most finished rants wins!

I’m having a party:
Requires 3+ buddies
Your car just turned into an ‘invite-only’ party! You can only attend if you are bringing something.
The person hosting says “I’m having a party and I am bringing               and              .” These two things have something in common and everyone else has to guess what it is and bring something  that has that thing.
For example, they could say “clouds and pillows”.  The thing in common there could be fluffy things, so you have to say something fluffy, like ‘cotton balls’. The person hosting will then tell you if you can attend the party.
The thing in common could be anything from things that are in the water (sharks and kelp) to the alphabet (apples, bees, candy). Use your imagination!

Coconut Cereal!

Hey guys!

Sorry this is late, but better late than never!
I finally found a recipe for healthy cereal! :D
Sugar cereals have too much sugar (wow surprise) for us to buy them on a regular basis. But now we can make some non-sugary cereal whenever we want!

You will need:
1½ cup coconut flakes
2 tablespoons pure maple syrup (to taste)
¼ teaspoon ground cinnamon

Preheat the oven to 250°F.

Dump everything in a bowl and mix until the flakes are all coated.

The mixture should look something like this.
Now is the time to taste everything and make sure it is the way you like it.

Lay it all out on a pan and spread it out. You will need to use your hands as the mixture will want to stick together.

Toast the flakes for about 15 minutes, or until golden brown. Set them out to cool as they get crispier as they cool.

And that is it! This is a yummy, easy breakfast treat and I hope you give a try!
