Healthy Bread

Hi guys!

So our family doesn’t eat wheat. Now guess what the main ingredient in bread is? Wheat flour. So we cannot eat bread.
Until now.
We finally found a recipe for healthy bread! Yay! Now we can have toast again!
Modified from: Low Carb-ology

You will need:
¾ cup egg white (we use the stuff in a container)
3 Tbsp olive oil
3 Tbsp water
1 ½ Tbsp apple cider vinegar
6 Tbsp flax seed (we use golden milled flax seed)
6 Tbsp almond flour
1 ½ Tbsp coconut flour
3 tsp baking powder
½ tsp salt

Beat the egg whites until they are nice and frothy.

Dump in the rest of the ingredients.

Now mix everything together. The consistency of the mixture is not always...consistent. Here my mixture was pretty thick, but I’ve also had it come pretty runny as well. If yours is runny then just add 20 seconds to the cooking time. Don’t add any more flour (or water if it is thick).

Now transfer the mixture to a greased pie pan. Or if you want little buns you could use ramekins. Just make sure they are greased!

Now microwave for 3 minutes.

As soon as it is done flip it out onto a cooling rack. Now it is done cooking here, but we like to stick it under the broiler on high for a few minutes to get it all nice and toasty. I do not have any photos of the toasty goodness though because I forgot it was in there and (as you can probably tell) it got burned. Oops! So if you toast yours be sure not to forget it!  This stuff tastes really bad burned.

But that’s pretty much it! You can use this bread the same way you use normal bread: for french toast, tuna melts or a nice sandwich. :) See you next week!

Tape Paintings

Hello!

A while ago I saw something I really like on Pinterest. Tape paintings!
I’m not sure if that’s what they really are called, but it works.
Inspired by this photo: Listotic

You will need:
Paint
Paint brushes
Tape (masking tape works best for me)
A canvas

Put the tape on the canvas to make a design. My sister did a heart with stripes, but you can do just random stuff too.

The next part is pretty simple: Paint everything! This is a perfect thing to do with little kids. They love painting and you love the artwork! :)

Once everything has been painted lay the paintings out to dry.

Once the paint is dry you can remove the tape! This painting is my little brothers. It’s a little splotchy because he was more interested in mixing the paint rather than painting the canvas.

This is my sister’s painting. She had a lot of fun with it!

And this is mine!
Anyway I hope you enjoyed this post! Leave a comment down below telling me if you tried this and if you liked it.

Bye!

Chocolate Smoothie Time!

Hey Guys!

Today I have something that I really enjoy for all of you. A chocolate smoothie!
I have never done a smoothie before, but it has chocolate, so I think it will fit right in with the rest of my treats!
So this recipe calls for a frozen banana. I recommend peeling the banana and then chopping it into 1-2 in. slices. I learned the bit about peeling the banana the hard way. Apparently common sense was on break that day for me. Oh well. Also: bananas take a long time to freeze. The minimum mine took was 5 hours. It might be a good idea to have a bag of bananas pre-frozen in the freezer so you don’t have to wait forever when you want a smoothie.
Now that I have talked-or typed-all my notes, we can make a smoothie!

You will need:
1 frozen banana
½ cup milk
1 tbsp cocoa powder
2 tbsp greek yogurt
2 tbsp peanut butter
1 tsp honey
1 tbsp flaxseed (for thickness-see below)
Smoothies are pretty straight-forward, so you probably know what I’m going to say next. Dump all your ingredients into a cup and mix it with your hand-blender. Or you could use a normal blender. Easy-peasy.

Yummy, a chocolate smoothie. If you want yours to be a little thicker you can add a tablespoon of flaxseed. I usually do.

And there you go! A delicious cold smoothie, without any ice-cream. Yay! This could even be your breakfast, as long as you have some cheese on the side.

See you next week!

Chocolate Marzipan Balls

Hey guys! Long time no see!

Today I have another recipe: Chocolate Marzipan Balls! These are sooooo delicious and probably my favorite healthy treat so far.
Let’s make some yummies!

You will need:
1 ½ cups Almond meal or course Almond flour
¼ cup Swerve Sweetener (I have used both the powdered and normal kinds and I loved both)
2 tsp Meringue powder or Egg white powder
2 tsp Almond extract
2 tbsp water
About 6 oz Chocolate

Mix the almond flour, swerve sweetener and meringue powder in your Cuisinart until well combined.

Add the almond extract and water and mix until the marzipan is doughy enough to hold it’s shape.

(bad photo, sorry)
Roll the marzipan into small balls and set on a cookie sheet. If you want, you could get a mold and shape the marzipan into hearts and stuff (see above link for details) but I’m just doing little balls.

Now go ahead and freeze the balls until they are hard.

When the balls are hard get out your chocolate and melt it.

Now use two forks to roll the balls around in the chocolate.

I would like to take a moment to compare the beautiful smooth-ness of ~most~ of these balls to the coconut balls:

I am very happy with how my rolling skills have improved.

Once you have finished rolling the marzipan balls in chocolate put them back in the freezer to harden the chocolate.

And you are done! These are really good and I hope you give them a try. Let me know how they turned out if you do!
Bye!

P.S.
